Sorry, but the "Token turning black" because Trey and Matt wanted a black guy is just a myth.

Token appears in class as his full black self earlier in the episode, right after Cartman gives his speech.

My guess is that they messed up with construction paper which they still used at the time, accidentally putting a white head on Token's body.

Maybe its some sort of South Park Easter egg... he has the T for Token shirt on and everything. If he was black in the first episode and white in the next, maybe it's just another South Park secret :) Might even be in a lot of episodes.
